Ingredients
1.5 lbs chicken breast, sliced into half-inch strips
3 large bell peppers (red, yellow, and green), sliced
1 large white onion, thinly sliced
2 tbsp olive oil
1 tbsp chili powder
1 tsp ground cumin
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
Salt and black pepper to taste
Instructions
Preheat your air fryer to 400°F (200°C) for 3 minutes.
In a large bowl, toss the chicken strips with 1 tablespoon of olive oil and half of the spice blend.
In a separate bowl, toss the sliced bell peppers and onions with the remaining olive oil and spice blend.
Place the chicken in the air fryer basket in a single layer and cook for 8 minutes.
Add the vegetable mixture to the air fryer basket with the chicken, tossing everything together.
Cook for an additional 4 to 6 minutes until the vegetables are tender-crisp and the chicken is fully cooked through.
Serve immediately with warm flour tortillas, lime wedges, and your choice of toppings.
Notes
For extra moisture, boneless chicken thighs can be substituted for breasts. If you prefer a spicier kick, replace one bell pepper with a sliced poblano pepper. Store leftovers in an airtight container in the refrigerator for up to 3 days.
