Description

Transform your daily breakfast with this protein-packed Air Fryer Cottage Cheese Toast. This recipe uses the gentle, circulating heat of the air fryer to crisp up artisan bread while warming the cottage cheese into a velvety, creamy topping. Finished with fresh tomatoes and aromatic basil, it offers a perfect balance of textures and flavors. It is an ideal, nutrient-dense solution for a busy morning or a light, satisfying lunch, providing a sophisticated twist on a classic open-faced sandwich.

Ingredients

Scale

2 slices sourdough or crusty artisan bread
1/2 cup 2% or 4% fat cottage cheese
1 medium vine-ripened tomato, sliced
46 fresh basil leaves, torn
1 tablespoon extra virgin olive oil
Salt and black pepper to taste

Instructions

Preheat your air fryer to 375°F (190°C) for 3 minutes.
Place the slices of bread directly into the air fryer basket.
Toast the bread for 2-3 minutes until lightly golden and firm.
Carefully remove the bread and spread an even layer of cottage cheese over the top of each slice.
Arrange the tomato slices on top of the cottage cheese.
Place the assembled toasts back into the air fryer and cook for an additional 3 minutes, or until the cheese is warmed through and the edges of the bread are crispy.
Remove carefully, top with fresh basil leaves, and drizzle with extra virgin olive oil.
Season with salt and freshly cracked black pepper before serving.

Notes

Use a piece of parchment paper under the bread if you want to avoid crumbs in the basket or for easier cleanup. If you prefer, you can lightly toast the bread for 1 minute before adding the toppings to ensure maximum crunch. Ensure the tomatoes are sliced thinly to prevent the bread from becoming soggy.
