Ingredients
1 lb lean ground beef (85/15 or 90/10)
1 tablespoon vegetable oil
1 small yellow onion, diced
2 cloves garlic, minced
15 oz red enchilada sauce
15 oz canned black beans, rinsed and drained
8 corn tortillas, cut into 1-inch strips
1.5 cups cheddar or monterey jack cheese, shredded
1/4 cup fresh cilantro, chopped
Optional: sliced green onions or sour cream for topping
Instructions
Heat the vegetable oil in a large 12-inch cast-iron or non-stick skillet over medium-high heat.
Add the lean ground beef and cook until browned, breaking it apart with a spatula.
Add the diced onion and sauté until softened, about 3-4 minutes, then stir in the minced garlic for 1 minute.
Pour in the red enchilada sauce and the rinsed black beans, stirring to combine and bringing to a gentle simmer.
Add the corn tortilla strips to the skillet, gently folding them into the sauce so they are submerged.
Reduce heat to medium-low, cover, and simmer for 5-7 minutes until the tortillas are tender.
Sprinkle the shredded cheese over the top, cover the skillet again, and let it sit for 2-3 minutes until the cheese is fully melted.
Remove from heat, garnish with fresh cilantro, and serve immediately.
