1.5 lbs lean ground beef (90/10 or 93/7)
2 cups long grain rice (basmati or jasmine, cooked)
15 oz can black beans, rinsed and drained
1 cup sweet corn, frozen or canned
1 cup chunky salsa
1 tbsp homemade taco seasoning (chili powder, cumin, garlic powder, onion powder, salt, pepper)
1 tbsp olive oil


Instructions

Place a large skillet over medium-high heat and add the olive oil.
Add the lean ground beef, breaking it apart with a spatula, and cook until browned and no longer pink.
Drain excess fat if necessary.
Stir in the homemade taco seasoning and cook for another minute until fragrant.
Divide the cooked rice equally among 5 meal prep containers.
Top each portion with the seasoned beef, rinsed black beans, and sweet corn.
Add a generous scoop of salsa to each container.
Seal the lids and store in the refrigerator for up to 5 days.

Notes

Keep the salsa and beans separated from the rice until you are ready to eat to maintain texture.
You can substitute ground turkey for a leaner option or quinoa instead of rice.
If using fresh bell peppers, add them during the last few minutes of browning the beef.
