Description
This nutrient-dense berry protein crumble offers a healthy twist on the classic rustic fruit bake. By combining tart, juicy summer berries with a satisfyingly crisp topping made from oat flour and protein powder, this recipe delivers a macro-friendly dessert that is perfect as a post-workout recovery treat or a wholesome family favorite. It provides a delightful contrast between the bubbling, sweet fruit base and the crunchy, protein-rich crown.
Ingredients
4 cups mixed berries (fresh or frozen strawberries, blueberries, and raspberries)
1 cup oat flour
1/2 cup vanilla protein powder
1/4 cup honey
1/4 cup melted coconut oil or butter
1/4 teaspoon salt
Instructions
Preheat oven to 375°F (190°C).
Place the mixed berries in an 8×8-inch baking dish.
In a medium bowl, combine the oat flour, protein powder, and salt.
Stir in the honey and melted coconut oil until the mixture resembles coarse crumbs.
Sprinkle the topping evenly over the berry base.
Bake for 30 minutes or until the fruit is bubbling and the topping is golden brown.
Allow to cool for 10 minutes before serving.
Notes
If using frozen berries, there is no need to thaw them beforehand. You can pulse rolled oats in a blender to create your own oat flour. Store leftovers in the refrigerator for up to 3 days and reheat in the oven or microwave.
