1.5 lbs boneless, skinless chicken breast, cubed
1 cup plain Greek yogurt
1/2 cup buffalo sauce (vinegar-based)
1 lb Yukon Gold potatoes, chopped into 1-inch cubes
1 lb fresh green beans, trimmed
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried oregano
Salt and black pepper to taste


Instructions

Preheat your oven to 400°F (200°C).
Toss the cubed Yukon Gold potatoes with 1 tablespoon of olive oil, salt, and pepper on a baking sheet; roast for 15 minutes.
In a bowl, toss chicken cubes with half the buffalo sauce and garlic powder.
After the potatoes have roasted for 15 minutes, remove the tray and push potatoes to one side. Add the chicken and green beans to the sheet pan, drizzling beans with the remaining oil and sprinkling with oregano.
Return to the oven for 15 minutes or until chicken reaches an internal temperature of 165°F and potatoes are golden.
Whisk the Greek yogurt with the remaining buffalo sauce to create a cooling dressing.
Divide the chicken, potatoes, and green beans into 4 meal prep containers and serve with the yogurt sauce on the side.

Notes

Store in airtight containers in the refrigerator for up to 4 days. Keep the Greek yogurt sauce in separate mini-containers if possible to maintain optimal freshness. Yukon Gold potatoes are recommended for their thin skin, but sweet potatoes make a great nutrient-dense alternative.
