Ingredients
1.5 lbs boneless skinless chicken breasts, cut into bite-sized pieces
2 tablespoons Cajun seasoning
3 tablespoons extra virgin olive oil
1 large yellow onion, sliced
2 bell peppers (mixed colors), sliced
2 cloves garlic, minced
Salt and black pepper to taste
Instructions
In a bowl, toss the chicken pieces with the Cajun seasoning until thoroughly coated.
Heat 2 tablespoons of olive oil in a large cast-iron skillet over medium-high heat.
Add the chicken to the skillet in a single layer and sear until golden brown and cooked through, about 6-8 minutes.
Remove the chicken from the skillet and set aside.
Add the remaining tablespoon of olive oil to the same skillet.
Add the onion and bell peppers, sautéing until tender-crisp, about 5 minutes.
Stir in the minced garlic and cook for an additional minute until fragrant.
Return the cooked chicken to the skillet and toss everything together to reheat and combine flavors.
Serve immediately while hot.
Notes
Use chicken thighs for a juicier texture if preferred.
Adjust the amount of cayenne pepper in your Cajun seasoning to control the heat level.
Store leftovers in an airtight container for up to 3 days in the refrigerator.
