Ingredients
1 lb 95/5 lean ground beef
1 lb Yukon Gold potatoes, diced into 1/2 inch cubes
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
Salt and black pepper to taste
4 cups shredded romaine lettuce
2 medium tomatoes, diced
1/2 cup dill pickles, sliced
1 cup plain Greek yogurt
1 tablespoon lemon juice
1 teaspoon dried dill
1/2 teaspoon onion powder
Instructions
Preheat your oven to 400°F (200°C).
Toss diced potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper on a baking sheet. Roast for 20-25 minutes until golden and tender.
