1.5 lbs boneless, skinless chicken thighs, cubed
15 oz can chickpeas, rinsed and drained
15 oz can crushed or fire-roasted diced tomatoes
2 tbsp vegetable oil
1 medium onion, finely diced
3 cloves garlic, minced
1 tbsp ginger, grated
2 tbsp high-quality curry powder
1 tsp ground turmeric
1 tsp ground coriander
1/2 tsp ground cumin
1/2 cup chicken broth (or water)
Salt and pepper to taste
Fresh cilantro for garnish


Instructions

Heat vegetable oil in a large pot or deep skillet over medium heat.
Add the onion and sauté until soft and translucent, about 5 minutes.
Stir in the garlic and ginger, cooking for another minute until fragrant.
Add the curry powder, turmeric, coriander, and cumin to the pot and toast for 30 seconds to bloom the spices.
Add the chicken thigh cubes and cook until browned on all sides.
Pour in the crushed tomatoes and chicken broth, stirring well to combine.
Bring the mixture to a simmer, cover, and cook for 15 minutes.
Add the chickpeas and continue to simmer uncovered for another 10 minutes until the sauce thickens and the chicken is fully cooked.
Season with salt and pepper to taste.
Serve warm, garnished with fresh cilantro.

Notes

This dish tastes even better the next day as the flavors meld together. Store in an airtight container in the refrigerator for up to 3 days. Use fire-roasted tomatoes for an extra layer of smoky complexity.
