Ingredients
1 lb chicken breast, sliced into uniform strips
8 oz protein-based pasta (chickpea or lentil)
1/2 cup basil pesto (nut-free or pine nut, non-alcoholic)
4 cups fresh baby spinach
2 tablespoons extra virgin olive oil
Salt and black pepper to taste
Instructions
Bring a large pot of salted water to a boil and cook the protein pasta until al dente.
While the pasta cooks, heat olive oil in a skillet over medium-high heat and sear the chicken strips until golden brown and cooked through.
Drain the pasta, reserving a splash of pasta water.
