Description
These high-protein cottage cheese bagels are a game-changer for your breakfast routine. By utilizing self-rising flour and creamy cottage cheese, this recipe skips the lengthy fermentation and boiling steps typical of traditional bagels. The result is a chewy, satisfying, and nutritious bread that is perfect for busy mornings. Enjoy them toasted with your favorite toppings for a wholesome start to your day.
Ingredients
1 cup full-fat or 2% cottage cheese
1 cup self-rising flour (or 1 cup AP flour + 1.5 tsp baking powder + 0.5 tsp salt)
1 large egg (for egg wash)
1 tablespoon water
Instructions
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the cottage cheese and self-rising flour until a shaggy dough forms.
Knead the dough on a lightly floured surface for 2-3 minutes until smooth.
Divide the dough into 4 equal portions and roll each into a rope, then pinch the ends together to form a ring.
Place the bagels on the prepared baking sheet.
Whisk the egg with 1 tablespoon of water and brush the mixture over the tops of the bagels.
Bake for 25 minutes or until the tops are golden brown and sound hollow when tapped.
Let cool slightly on a wire rack before slicing.
Notes
Ensure your cottage cheese is well-drained to prevent the dough from becoming too sticky. You can sprinkle poppy seeds, sesame seeds, or dried onion on top before baking for extra flavor. Store in an airtight container for up to 3 days or freeze for up to one month.
