Description

This high-protein pasta dish transforms simple, healthy ingredients into a creamy, luxurious meal. By blending cottage cheese into a smooth, velvety sauce, we create a guilt-free alternative to traditional alfredo. Featuring lean chicken breast, nutrient-dense spinach, and hearty protein pasta, this balanced recipe is perfect for a quick, satisfying weeknight dinner that supports your fitness goals while delivering deep, savory satisfaction.

Ingredients

Scale

2 cups cottage cheese
1 lb chicken breast, thinly sliced
12 oz protein pasta
4 cups fresh spinach, roughly chopped
3 cloves garlic, freshly minced
1 tbsp olive oil
Salt and black pepper to taste
Optional: red pepper flakes for heat

Instructions

Bring a large pot of salted water to a boil and cook the protein pasta until al dente.
While the pasta cooks, heat olive oil in a wide skillet over medium-high heat and cook the sliced chicken until golden brown and cooked through.
Reduce heat to low and add minced garlic, sautéing for 1 minute until fragrant.
Place the cottage cheese in a blender and process until completely smooth and creamy.
Add the chopped spinach to the skillet and cook until wilted.
Drain the pasta, reserving a splash of pasta water, and return it to the pot.
Remove the skillet from heat and stir in the blended cottage cheese, then toss with the cooked chicken, spinach, and pasta.
Adjust consistency with reserved pasta water if needed and serve immediately.

Notes

Ensure the cottage cheese is blended until fully smooth to avoid curd texture. Keep the heat low when adding the cheese to prevent separation. Store leftovers in an airtight container for up to 3 days; reheat gently on the stovetop.
