Description
Indulge in this elegant, skillet-cooked meal featuring tender chicken breasts perfectly seared and simmered in a robust, velvety sauce. By substituting heavy cream with Greek yogurt, this Italian-inspired classic achieves a sophisticated, tangy creaminess that is lighter and packed with protein. With the punchy aromatics of fresh garlic, the sweetness of sun-dried tomatoes, and vibrant spinach, this dish strikes the perfect balance between rustic flavor and modern culinary health, making it an ideal choice for both weeknight dinners and special occasions.
Ingredients
4 boneless, skinless chicken breasts
2 tablespoons olive oil
4 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
2 cups fresh spinach
1 cup plain Greek yogurt
1/2 cup grated Parmesan cheese
Salt and black pepper to taste
Instructions
Bring chicken to room temperature for 15 minutes before cooking.
Season chicken breasts with salt and pepper.
Heat olive oil in a large skillet over medium-high heat and sear the chicken until golden brown and cooked through.
Remove chicken from the skillet and set aside.
In the same skillet, add minced garlic and sun-dried tomatoes, sautéing until fragrant.
Turn heat to low and stir in the Greek yogurt and Parmesan cheese until smooth and creamy.
Add the fresh spinach and cook until just wilted.
Return the chicken to the skillet to coat with the sauce and serve warm.
Notes
Use a heavy-bottomed or stainless steel skillet for best heat distribution. If the sauce is too thick, thin it with a tablespoon of water or vegetable broth. You can substitute chicken breasts with boneless thighs for added moisture.
