Ingredients
1.5 lbs chicken breasts
1 cup sun-dried tomatoes (oil-packed, drained and chopped)
4 cloves garlic, minced
1 cup Greek yogurt
2 cups fresh baby spinach
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Place the chicken breasts in the bottom of the slow cooker.
Add the minced garlic and chopped sun-dried tomatoes on top of the chicken.
Season with salt and pepper.
Cover and cook on high for 4 hours or low for 7 hours.
Remove the lid and stir in the Greek yogurt until smooth.
Fold in the fresh spinach and let sit for 5 minutes until wilted.
Serve warm, optionally over pasta or grains.
Notes
If you prefer a thicker sauce, stir in a cornstarch slurry (1 tablespoon cornstarch mixed with 1 tablespoon water) during the final 30 minutes of cooking. Swap chicken breasts for boneless skinless chicken thighs for extra moisture. Kale can be used as a hearty alternative to spinach.
