Ingredients
8 large eggs
1 can (15 oz) black beans, rinsed and drained
4 large flour tortillas
1 cup shredded cheddar or Monterey Jack cheese
1/2 cup medium-heat tomato or tomatillo salsa
1 tablespoon butter or vegetable oil
Salt and pepper to taste
Optional: chopped cilantro or fresh diced onions for garnish
Instructions
Whisk the eggs in a medium bowl with a pinch of salt and pepper until well combined.
Heat butter or oil in a non-stick skillet over medium-low heat.
Add the eggs to the skillet and cook gently, stirring occasionally, until soft and moist curds form.
In a separate small pan or microwave-safe bowl, warm the rinsed black beans.
Warm the flour tortillas in a dry skillet or microwave for 15-20 seconds to make them pliable.
Lay each tortilla flat and assemble by placing a portion of eggs, black beans, cheese, and salsa in the center.
Fold in the sides of the tortilla, then roll tightly to seal the burrito.
Serve immediately while warm.
Notes
For the best melting results, grate your cheese from a block rather than using pre-shredded varieties. Store leftover burritos by wrapping them individually in foil and refrigerating for up to 3 days or freezing for up to 1 month. To reheat from frozen, microwave for 1-2 minutes until heated through.
