2 cups water

1 cup cherry tomatoes, halved
1/2 cup Kalamata olives, pitted and sliced

1/2 cucumber, grated and squeezed dry
1 clove garlic, minced (for tzatziki)


Instructions

Rinse quinoa and combine with water in a saucepan; bring to a boil, then simmer covered for 15 minutes or until water is absorbed; fluff with a fork.
In a bowl, toss the chicken with olive oil, oregano, minced garlic, lemon zest, and lemon juice; let marinate for at least 10 minutes.
Heat a large skillet over medium-high heat and cook the chicken until golden brown and cooked through, about 6-8 minutes.
Prepare the tzatziki by mixing Greek yogurt, grated cucumber, and minced garlic in a small bowl.
Assemble bowls by layering cooked quinoa, grilled chicken, fresh cucumbers, tomatoes, and olives.
