This recipe features succulent, lemon-herb marinated chicken breast served alongside fluffy quinoa, a crisp cucumber-tomato salad, and creamy feta cheese. Finished with a cooling dollop of tzatziki, it offers a refreshing blend of textures and classic Greek flavors that stay fresh and delicious for days.


Ingredients

1.5 lbs chicken breasts, trimmed and cubed
3 tbsp olive oil
2 tbsp fresh lemon juice
1 tbsp dried oregano
3 cloves garlic, minced
1.5 cups quinoa, rinsed
3 cups water or vegetable broth
1 cup cucumber, diced
1 cup cherry tomatoes, halved
1/2 cup feta cheese, crumbled
1/2 cup tzatziki sauce


Instructions

Whisk together olive oil, lemon juice, dried oregano, and minced garlic in a bowl, then toss with chicken cubes to marinate for 15 minutes.
Cook quinoa in water or broth according to package instructions, then fluff with a fork and set aside to cool.
Heat a heavy-bottomed skillet over medium-high heat and sear the marinated chicken until browned and cooked through, about 6-8 minutes.
Combine diced cucumber and tomatoes in a small bowl.
Divide the cooked quinoa into 4 meal prep containers.
Top each container with a portion of the cooked chicken and the cucumber-tomato mix.
Sprinkle with crumbled feta cheese.
Serve with a dollop of tzatziki on the side or store containers in the refrigerator with tzatziki kept separate until ready to eat.

Notes

Keep the tzatziki in a separate small container to maintain the crunchiness of the vegetables until serving. Sub farro or couscous if desired, or use turkey tenders as a protein alternative. Store in an airtight container in the refrigerator for up to 4 days.
