By incorporating creamy natural peanut butter, each bite achieves a smooth, fudge-like consistency that is as satisfying as it is healthy. It is a simple, no-bake recipe that offers a smarter alternative to processed store-bought desserts.
Ingredients
2 cups plain full-fat Greek yogurt
1/4 cup natural creamy peanut butter
3 tablespoons honey
1/2 cup fresh strawberries, sliced
1/4 cup fresh blueberries
1/4 cup granola
Instructions
Line a rimmed baking sheet with parchment paper.
In a medium bowl, whisk together the Greek yogurt, peanut butter, and honey until completely smooth.
Pour the mixture onto the prepared baking sheet and spread it evenly with a spatula to your desired thickness.
Scatter the fresh strawberries, blueberries, and granola across the surface, pressing them lightly into the yogurt mixture.
Place the baking sheet in the freezer and freeze for at least 4 hours, or until firm.
Once completely set, lift the parchment paper and break the bark into rustic, uneven pieces using your hands or a sharp knife.
Serve immediately and keep leftovers stored in the freezer.
Notes
Store leftovers in an airtight container in the freezer for up to one week. If the bark is too hard, let it sit at room temperature for 1-2 minutes before serving. You can substitute maple syrup for honey if preferred.
