1 lb lean ground beef (90/10 or 95/5 ratio)
2 cups jasmine or basmati rice
4 cups water or vegetable broth
2 cups fresh broccoli florets
2 medium carrots, peeled and sliced into coins
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/4 cup low-sodium soy sauce


Instructions

Cook the rice in water or broth according to package directions, fluff with a fork, and set aside.
Heat a large skillet over medium-high heat and add the ground beef.
Break up the beef and cook until thoroughly browned; drain any excess grease.
