1 lb lean ground turkey (93/7 ratio)
1 medium yellow onion, diced
2 bell peppers (red and yellow), diced
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
1 cup mozzarella cheese, shredded
1 tbsp olive oil
1 tsp dried Italian herbs
Salt and black pepper to taste


Instructions

Heat olive oil in a large skillet over medium-high heat.
Add the ground turkey to the pan and brown it well, breaking it into crumbles until fully cooked through.
Add the diced onion and bell peppers to the skillet, sautéing until softened and aromatic, about 5-7 minutes.
Stir in the minced garlic and cook for 1 minute until fragrant.
Pour in the diced tomatoes with their juices, stir in the dried herbs, and season with salt and pepper.
Simmer for 5-8 minutes to let the flavors meld and the sauce thicken slightly.
Sprinkle the mozzarella cheese evenly over the top, cover the skillet, and cook for 1-2 minutes until cheese is melted and bubbly.
Serve immediately.

Notes

Drain half of the tomato juice if you prefer a thicker, less saucy skillet. For added heat, include a pinch of red pepper flakes during the vegetable sauté. Store leftovers in an airtight container for up to 3 days.
