Ingredients

1.5 cups oat flour
1 cup chocolate protein powder (whey or whey-casein blend)
0.5 cup unsweetened Dutch-processed cocoa powder
1 cup plain Greek yogurt
2 large eggs, room temperature
0.5 cup maple syrup
0.5 tsp baking powder
1 pinch salt
0.5 cup dark chocolate chips (optional)


Instructions

Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
In a large bowl, whisk together the oat flour, protein powder, cocoa powder, baking powder, and salt.
In a separate bowl, combine the Greek yogurt, eggs, and maple syrup until smooth.
Fold the wet ingredients into the dry ingredients until just combined, being careful not to overmix.
Fold in the dark chocolate chips if using.
Pour the batter into the prepared baking pan and smooth the top with a spatula.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs.
Remove from the oven and allow to cool completely in the pan before slicing into 9 even squares.

Notes

To make oat flour at home, simply pulse rolled oats in a high-speed blender until a fine, flour-like consistency is reached. Store brownies in an airtight container in the refrigerator for up to 5 days to maintain the best texture. If using plant-based protein powder, you may need to add an extra tablespoon of yogurt to ensure the batter is not too dry.
