Ingredients
3–4 lbs bone-in, skin-on turkey breast
6 cloves garlic, smashed
3 sprigs fresh rosemary
5 sprigs fresh thyme
2 tbsp olive oil
1 tbsp lemon juice
1 tsp lemon zest
1 tsp kosher salt
1/2 tsp cracked black pepper
Instructions
Preheat your oven to 375°F (190°C).
Pat the turkey breast completely dry with paper towels.
In a small bowl, combine olive oil, lemon juice, lemon zest, salt, and pepper.
Loosen the skin of the turkey breast and tuck half the garlic and half the herbs underneath.
Rub the remaining oil mixture all over the skin and meat.
Place the remaining garlic and herbs at the bottom of a roasting pan and set the turkey on top.
Roast for 60 minutes or until an internal temperature reaches 165°F (74°C) at the thickest part.
Remove from the oven and tent with foil; let the turkey rest for at least 15 minutes before carving.
