Indulge in a wholesome treat that combines the classic comfort of banana bread with a modern, protein-packed nutritional profile. This moist, nutrient-dense loaf uses oat flour, Greek yogurt, and protein powder to create a satisfying breakfast or post-workout snack. It delivers a tender crumb and deep banana flavor without any refined sugars or heavy flours, making it an excellent choice for athletes, families, and busy professionals alike.
Ingredients
3 large ripe bananas, mashed
1/2 cup Greek yogurt
2 large eggs, room temperature
2 cups oat flour
1/2 cup vanilla whey or plant-based protein powder
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp vanilla extract
Instructions
Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
In a large bowl, whisk together the mashed bananas, Greek yogurt, eggs, and vanilla extract until smooth.
In a separate bowl, combine the oat flour, protein powder, baking powder, baking soda, and salt.
Gradually stir the dry ingredients into the wet ingredients until just combined; do not overmix.
Pour the batter into the prepared loaf pan and spread evenly.
Bake for 50 minutes or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack.
Notes
Store the loaf in an airtight container in the refrigerator for up to 5 days. For longer storage, slice and freeze the bread, then reheat in a toaster or microwave. To make your own oat flour, simply blend rolled oats in a high-speed blender until a fine powder forms.
