1 lb lean ground beef (90/10)
2 cups cooked brown rice
1 can (15 oz) black beans, rinsed and drained
1 cup charred corn
1 tbsp chili powder
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp salt
1/2 cup fresh chunky salsa
1 ripe avocado, sliced
Fresh cilantro for garnish


Instructions

Heat a large skillet over medium-high heat.
Add the lean ground beef to the skillet and sear until browned, breaking it apart with a spatula.
Stir in the chili powder, cumin, smoked paprika, and salt, cooking for 1 minute until fragrant.
Add the rinsed black beans and charred corn to the skillet, heating through for about 2-3 minutes.
Divide the cooked brown rice into four serving bowls.
Top each bowl with the beef and bean mixture.
Add a scoop of fresh salsa and slices of avocado to each bowl.
Garnish with fresh cilantro before serving.

Notes

Store in airtight containers for up to 4 days for meal prep. Add avocado fresh at the time of serving to prevent browning. You can swap the brown rice for quinoa for an extra protein boost.
