Description

A nutritious and filling meal that pairs high-protein, fiber-rich lentil pasta with a vibrant marinara sauce, fresh spinach, and creamy cottage cheese. This modern Mediterranean-inspired dish is perfect for a quick, healthy weeknight dinner that balances earthy textures with savory, creamy satisfaction. It offers a sustained energy boost, making it a superior choice to traditional wheat-based pasta dishes.

Ingredients

Scale

8 oz red or yellow lentil pasta
2 cups marinara sauce
2 cups fresh baby spinach
1/2 cup small curd cottage cheese
1 tbsp olive oil
Salt and black pepper to taste

Instructions

Bring a large pot of salted water to a boil and cook the lentil pasta according to package directions, being careful not to overcook.
While the pasta cooks, heat olive oil in a wide skillet over medium heat.
Add the spinach to the skillet and sauté for 1-2 minutes until just wilted.
Pour the marinara sauce into the skillet with the spinach and warm through.
Drain the cooked pasta and add it directly to the skillet with the sauce.
Toss gently to coat the noodles evenly.
Remove from heat and stir in the cottage cheese, or serve the pasta topped with a generous dollop of cheese.
Season with additional salt and pepper if desired.

Notes

Ensure you do not overcook the lentil pasta, as it can turn mushy faster than wheat pasta. Use small curd cottage cheese for the best texture distribution. This dish is best served immediately for the ideal mouthfeel.
