Ingredients
1 lb ground turkey
1/2 cup panko breadcrumbs
2 cloves garlic, minced
1/4 cup fresh parsley, chopped
1 tsp dried oregano
2 medium zucchini, diced into 1-inch pieces
2 bell peppers (red and yellow), diced into 1-inch pieces
2 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
Instructions
Preheat oven to 400°F (200°C).
In a large bowl, combine ground turkey, panko, minced garlic, parsley, oregano, salt, and pepper until well incorporated.
Form the mixture into uniform 1-inch meatballs.
Place the diced zucchini and bell peppers on a large sheet pan.
Drizzle the vegetables with olive oil and toss to coat, then spread them in an even layer.
Nestle the turkey meatballs among the vegetables on the sheet pan.
Roast for 20-25 minutes, or until the meatballs reach an internal temperature of 165°F and vegetables are tender.
