1.5 cups Long-grain white rice
3 cups Beef broth (low-sodium)
15 oz can Black beans, rinsed and drained
1 cup Sweet corn
1 tbsp Chili powder
1 tsp Ground cumin
1 tsp Smoked paprika
1/2 tsp Salt
1/2 tsp Black pepper
1 tbsp Olive oil
Instructions
Heat olive oil in a large pot or deep skillet over medium-high heat.
Add the lean ground beef and cook until browned, breaking it apart with a spoon.
Stir in the chili powder, cumin, smoked paprika, salt, and pepper until the beef is well coated.
Add the dry white rice to the pot and toast for 1-2 minutes, stirring frequently.
Pour in the beef broth, then stir in the black beans and sweet corn.
Bring the mixture to a boil, then reduce heat to low, cover with a tight-fitting lid, and simmer for 18-20 minutes until the rice is tender and liquid is absorbed.
Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
Notes
Ensure your beef broth is high-quality for the best flavor outcome. Rinse the black beans thoroughly to reduce sodium content. This dish can be garnished with fresh cilantro, lime wedges, or diced avocado if desired.
