It is a perfect, time-saving solution for busy weeknights that provides a nutrient-dense alternative to classic Italian-American favorites.
Ingredients
1 lb boneless skinless chicken breast, thinly sliced
12 oz protein penne or fusilli pasta
3 cups chicken broth
1 cup full-fat or 2% Greek yogurt
1 cup freshly grated Parmesan cheese
2 cloves garlic, minced
1 tbsp olive oil
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Heat olive oil in a large deep skillet or pot over medium-high heat.
Add the sliced chicken breast, season with salt and pepper, and cook until browned and cooked through. Remove chicken from the pan and set aside.
In the same pan, add the chicken broth and minced garlic, bringing it to a simmer.
Add the protein pasta to the broth and cook until al dente, stirring occasionally to prevent sticking.
Reduce heat to low and stir in the Greek yogurt and Parmesan cheese until the sauce is smooth and creamy.
Return the cooked chicken to the pan and toss everything to combine thoroughly.
Garnish with fresh parsley and serve immediately.
Notes
Use freshly grated Parmesan for the best sauce consistency; pre-shredded cheese contains anti-caking agents that hinder melting. If the sauce becomes too thick, add a splash of reserved chicken broth or water to reach desired consistency.
