Ingredients
1 lb boneless skinless chicken breast, cut into bite-sized pieces
8 oz protein pasta (chickpea or lentil)
24 oz marinara sauce (no sugar added)
2 cups chicken broth (halal)
1 tsp dried oregano
1 tsp garlic powder
1 cup fresh mozzarella, freshly grated
1/4 cup parmesan cheese, grated
Fresh basil for garnish
1 tbsp olive oil
Instructions
Heat olive oil in a large deep skillet or pot over medium-high heat.
Add the chicken breast pieces, seasoning with oregano and garlic powder, and cook until browned on all sides.
Pour in the marinara sauce and chicken broth, stirring well to combine.
Add the dry protein pasta, ensuring it is submerged in the liquid.
Bring the mixture to a gentle boil, then reduce heat to low and cover.
Simmer for 12-15 minutes or until pasta is al dente and chicken is cooked through.
Stir in half of the mozzarella and parmesan cheese until melted.
Top with remaining cheese and cover for 1 minute to let it melt.
Garnish with fresh basil before serving.
Notes
For best results, use fresh mozzarella which melts smoother than pre-shredded cheese. If the sauce becomes too thick while simmering, add a splash of water or extra broth. Store leftovers in an airtight container for up to 3 days.
