Description
This one pot garlic shrimp rice is the ultimate weeknight solution for home cooks seeking a balanced meal without the clutter of multiple pans. By combining succulent shrimp, aromatic garlic, and fluffy jasmine rice in a single skillet, you create a cohesive, flavorful dish that features a perfect texture contrast. It is a reliable, restaurant-quality staple that is as easy to clean up as it is to prepare.
Ingredients
1 lb large shrimp, peeled and deveined
1.5 cups jasmine rice, rinsed
5 cloves garlic, minced
1 cup frozen garden peas
2.5 cups chicken or vegetable broth
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
Fresh parsley for garnish
Instructions
Heat the olive oil in a large skillet over medium heat.
Add the minced garlic and sauté until fragrant, about 1 minute.
Stir in the rinsed jasmine rice and cook for 2 minutes to coat the grains in the garlic-infused oil.
Pour in the broth and add salt and pepper, bringing the mixture to a boil.
Reduce heat to low, cover, and simmer for 15 minutes until the liquid is mostly absorbed.
Stir in the peas and nestle the shrimp into the top of the rice.
Cover again and cook for an additional 5 minutes until the shrimp are pink and cooked through.
Remove from heat, fluff with a fork, garnish with parsley, and serve immediately.
Notes
Ensure the rice is well-rinsed to prevent it from becoming too sticky. Adding the shrimp in the final 5 minutes is crucial to keeping them tender and juicy rather than rubbery. You can substitute the peas with edamame if preferred.
