1.5 cups medium-heat chunky salsa

1 tablespoon taco seasoning
1 tablespoon olive oil
Optional: shredded cheddar cheese, chopped cilantro, and lime wedges for garnish


Instructions

Heat the olive oil in a large deep skillet or Dutch oven over medium-high heat.
Add the ground turkey to the pan, breaking it up with a spoon, and cook until browned and fully cooked through.
Stir in the taco seasoning until the turkey is evenly coated.
Add the uncooked white rice to the skillet and stir for one minute to toast lightly.
Pour in the salsa, broth, and rinsed black beans; stir well to combine.
Bring the mixture to a gentle boil, then reduce the heat to low and cover with a tight-fitting lid.
Simmer for 18-20 minutes, or until the rice is tender and the liquid has been fully absorbed.
Remove from heat and let it rest, covered, for 5 minutes.

Notes
