Description

Experience a healthy twist on a bistro classic. This Protein Broccoli Cheddar Soup swaps heavy cream for a protein-rich cottage cheese base, creating a velvety, satisfying texture. Loaded with fresh broccoli and sharp cheddar, this soup offers a sophisticated flavor profile while remaining nutritious. It is the perfect cozy meal for chilly evenings, providing a high-protein, fiber-rich dinner that keeps you satiated without the lethargy often found in heavier cheese-based soups.

Ingredients

Scale

4 cups fresh broccoli florets and thinly sliced stems
1.5 cups full-fat cottage cheese
2 cups low-sodium chicken broth
1 cup whole milk
2 cups sharp cheddar cheese, freshly grated
3 cloves garlic, minced
1/2 teaspoon onion powder
1/4 teaspoon black pepper
1/4 teaspoon salt

Instructions

In a blender, combine the cottage cheese and milk until completely smooth and creamy.
Heat a large pot over medium heat and add the chicken broth, minced garlic, onion powder, and the thinly sliced broccoli stems.
Simmer for 8 minutes until stems begin to soften.
Add the broccoli florets to the pot and cook for another 5 minutes until tender-crisp.
Reduce heat to low and stir in the blended cottage cheese mixture.
Gradually fold in the grated sharp cheddar cheese, stirring constantly until melted and smooth.
Season with salt and pepper to taste.
Serve immediately while warm.

Notes

Always grate your own cheddar from a block, as pre-shredded cheese contains anti-caking agents that prevent a smooth melt. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat gently on the stovetop over low heat to prevent the cheese from separating.
