They are simple to prepare and rely on functional, high-quality ingredients that align with your health and fitness goals.
Ingredients
2 cups oat flour
1 scoop (approx 30g) whey or plant-based protein powder
1/2 cup plain unsweetened Greek yogurt
1 large egg
1/2 cup dark chocolate chips
1/2 teaspoon baking soda
1/4 cup natural sweetener of choice
1 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together the oat flour, protein powder, and baking soda.
In a separate bowl, mix the Greek yogurt, egg, sweetener, and vanilla extract until smooth.
Combine the wet ingredients into the dry ingredients and mix until just incorporated.
Gently fold in the dark chocolate chips.
Scoop rounded tablespoons of dough onto the prepared baking sheet.
Bake for 10-12 minutes until the edges are set but the center remains slightly soft.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
To make your own oat flour, simply pulse rolled oats in a blender until they reach a fine, flour-like consistency. Store these cookies in an airtight container in the refrigerator for up to 5 days to maintain the best texture due to the Greek yogurt content.
