Ingredients

12 oz protein pasta (lentil or chickpea based)
1 lb chicken breast, trimmed and cubed
1/2 cup dairy-free basil pesto
4 cups fresh baby spinach
1 cup cherry tomatoes, halved
1 tbsp olive oil
Salt and black pepper to taste


Instructions

Bring a large pot of salted water to a boil and cook the protein pasta according to package directions until al dente.
While the pasta cooks, heat olive oil in a large skillet over medium-high heat.
Season the chicken cubes with salt and pepper, then add to the skillet and sear until cooked through and golden brown.
Drain the pasta and return it to the pot.
Add the pesto to the hot pasta and toss until well coated.
Divide the pasta among four meal prep containers.
Top each with the cooked chicken, fresh baby spinach, and cherry tomatoes.
Cover and store in the refrigerator for up to 4 days.

Notes

Store the pesto separately if you prefer maximum sauce freshness. If you prefer roasted tomatoes, halve them and roast at 400°F (200°C) for 15 minutes before adding to the meal prep. Ensure your pesto is free of prohibited ingredients by checking for accidental alcohol-based vinegar or flavorings.
