By using natural peanut butter and customizable protein powder, you maintain total control over your macros without compromising on the iconic texture and flavor of a classic chocolate snack.
Ingredients
250g Dark Chocolate Chips (minimum 70% cocoa)
150g Creamy Natural Peanut Butter
60g Vanilla or Unflavored Protein Powder
2 tbsp Coconut Oil
Instructions
Line a muffin tin with 12 paper liners.
In a microwave-safe bowl, combine half of the dark chocolate chips with 1 tablespoon of coconut oil; melt in 30-second increments, stirring until smooth.
Spoon a small amount of melted chocolate into the bottom of each muffin liner to cover the base; place in the freezer for 5-10 minutes to set.
In a separate bowl, mix the peanut butter and protein powder until a thick, smooth dough forms.
Roll the peanut butter mixture into 12 small discs and place them into the center of the chilled chocolate bases.
In the same bowl used for the first batch, melt the remaining chocolate chips and remaining tablespoon of coconut oil.
Pour the remaining chocolate over the peanut butter discs to cover completely.
Chill in the freezer for at least 15-20 minutes until firm.
Notes
Store in the refrigerator or freezer in an airtight container to prevent melting. If using plant-based protein powder, add an extra teaspoon of peanut butter if the mixture appears too crumbly.
