Description

Elevate your snacking game with these irresistibly crunchy, protein-packed roasted chickpeas. By mastering the art of moisture management, this method transforms humble canned legumes into a golden, savory delight. Perfect as a guilt-free snack, a crunchy salad topper, or a nutritious addition to soups, these chickpeas offer a satisfying texture contrast between a shatteringly crisp exterior and a creamy center. Naturally plant-based and incredibly easy to prepare, they are the ultimate pantry staple for healthy, mindful living.

Ingredients

Scale

2 cans (15 oz each) chickpeas, drained and rinsed
2 tablespoons extra virgin olive oil
1 teaspoon paprika (or smoked paprika)
1 teaspoon garlic powder
1/2 teaspoon kosher salt

Instructions

Preheat your oven to 400°F (200°C).
Thoroughly pat the chickpeas dry using a clean kitchen towel or paper towels to ensure they crisp rather than steam.
Spread the dried chickpeas on a rimmed baking sheet and roast for 20 minutes to remove remaining moisture.
Remove the baking sheet from the oven, drizzle with olive oil, and sprinkle with paprika, garlic powder, and salt.
Toss well to coat evenly.
Return the chickpeas to the oven and roast for an additional 10 minutes until golden and crisp.

Notes

For maximum crispiness, allow the chickpeas to cool completely on the baking sheet before serving. Store in an airtight container at room temperature for up to 3 days. If they lose their crunch, flash-roast them in a 350°F oven for 5 minutes.
