Ingredients

4 salmon fillets (center-cut)
2 cups basmati rice, cooked
1 lb asparagus, trimmed
2 tbsp extra virgin olive oil
2 lemons (zest and juice)
Salt to taste
Black pepper to taste


Instructions

Rinse rice and cook according to package instructions, then set aside to cool.
Trim the woody ends off the asparagus.
Heat 1 tbsp of olive oil in a skillet over medium heat and sauté asparagus until crisp-tender, about 5-7 minutes. Season with salt and pepper.
Season salmon fillets with salt and pepper.
In the same skillet, add remaining olive oil over medium-high heat.
Sear salmon fillets for 4-5 minutes per side until a golden crust forms and the fish is tender.
Divide rice, asparagus, and salmon into four meal prep containers.
Drizzle each portion with fresh lemon juice and top with lemon zest before sealing containers.

Notes

Store in airtight containers in the refrigerator for up to 3 days. Reheat gently in the microwave for 60-90 seconds to maintain the texture of the salmon. Ensure salmon is fully cooked before storage.
