Ingredients
1.5 lbs flank steak or top sirloin, thinly sliced against the grain
2 cups beef broth
1/2 cup low-sodium soy sauce
1/3 cup brown sugar
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 tablespoon sesame oil
2 tablespoons cornstarch
1/4 cup cold water
4 cups fresh broccoli florets
Instructions
Place the sliced beef into the slow cooker.
In a medium bowl, whisk together beef broth, soy sauce, brown sugar, minced garlic, grated ginger, and sesame oil.
Pour the sauce mixture over the beef and stir to combine.
Cover and cook on low for 4 hours.
In a small bowl, whisk together the cornstarch and cold water until smooth, then stir this slurry into the slow cooker.
Add the broccoli florets to the slow cooker, stirring gently to coat.
Cover and cook on high for an additional 20-30 minutes, or until the broccoli is tender-crisp and the sauce has thickened.
Serve immediately over steamed rice or noodles.
Notes
Ensure you slice the beef against the grain to maximize tenderness. For a thicker sauce, you can increase the cornstarch slurry ratio. Store leftovers in an airtight container in the refrigerator for up to 3 days.
