Description

Transform lean chicken breast into an incredibly tender and flavorful meal with this effortless slow cooker recipe. By braising the meat in a savory blend of chicken broth, aromatic yellow onion, garlic, and a smoky paprika-BBQ rub, you achieve a succulent result every time. Perfect for busy weeknights, this versatile dish can be served in tacos, on toasted buns, or over a bed of fluffy rice. It is a wholesome, crowd-pleasing dinner that relies on gentle, consistent heat to deliver deep, complex flavors without the need for constant supervision.

Ingredients

Scale

2 lbs boneless, skinless chicken breast
1 cup chicken bone broth
1 medium yellow onion, sliced
3 cloves garlic, minced
2 tablespoons smoked paprika
3 tablespoons BBQ seasoning (salt-based)
1 tablespoon olive oil

Instructions

Place the sliced yellow onions and minced garlic at the bottom of the slow cooker.
Pat the chicken breasts dry and rub them thoroughly with the smoked paprika and BBQ seasoning.
Place the seasoned chicken on top of the onion and garlic bed.
Pour the chicken broth around the sides of the chicken.
Cover and cook on Low for 7 hours or High for 4 hours.
Once the cooking time is complete, remove the chicken to a cutting board.
Shred the chicken using two forks and discard any excess fat or gristle.
Return the shredded chicken to the slow cooker and toss with the cooking liquid to incorporate flavor.
Serve warm on buns, in tacos, or over rice.

Notes

Ensure the BBQ seasoning blend does not contain any alcohol-based ingredients or pork-derived flavorings. Store leftovers in an airtight container in the refrigerator for up to 3 days. For a thicker sauce, remove the chicken and simmer the remaining liquid in a saucepan on the stove until reduced before tossing back with the meat.
