1.5 lbs boneless skinless chicken breasts
2 cans (15 oz each) Great Northern or Cannellini beans, drained and rinsed
4 cups chicken broth
1 can (4 oz) diced green chiles
1 tablespoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon chili powder
1/2 cup Greek yogurt
Salt and black pepper to taste
Fresh cilantro for garnish


Instructions

Place the chicken breasts at the bottom of a 6-quart slow cooker.
Add the drained beans, green chiles, cumin, oregano, and chili powder over the chicken.
Pour the chicken broth over the top of the ingredients.
Cover and cook on Low for 7 hours or High for 4 hours.
Once cooked, remove the chicken breasts and shred them using two forks.
Use a potato masher or large spoon to mash about 1/4 of the beans directly against the side of the pot to thicken the liquid.
Return the shredded chicken to the pot and stir to combine.
Stir in the Greek yogurt until well incorporated.
Season with salt and pepper to taste.
Serve warm, topped with fresh cilantro if desired.

Notes

Use a 6-quart slow cooker for best results to allow circulation. Ensure chicken is fully thawed before adding to the slow cooker for safety. For a spicier version, swap green chiles for fresh jalapeños.
