1.5 lbs chicken breast, cut into uniform bite-sized pieces
1/2 cup low-sodium soy sauce
2 tablespoons honey
1 tablespoon freshly grated ginger
2 cloves garlic, minced
1 tablespoon sesame oil
4 cups broccoli florets
2 tablespoons olive oil
2 cups cooked jasmine rice
1 tablespoon sesame seeds (optional garnish)
2 green onions, sliced (optional garnish)


Instructions

Preheat your oven to 400°F (200°C).
Toss broccoli florets with olive oil on a sheet pan and bake for 15-20 minutes until tender-crisp.
In a small bowl, whisk together soy sauce, honey, grated ginger, and minced garlic to create the teriyaki sauce.
Heat sesame oil in a large skillet over medium-high heat.
Add chicken pieces to the skillet in a single layer, searing until golden brown and cooked through.
Pour the prepared teriyaki sauce over the chicken and stir to coat, cooking for 1-2 minutes until the sauce thickens and glazes the chicken.
Divide cooked rice, roasted broccoli, and glazed chicken into four airtight meal prep containers.
Allow to cool before sealing and refrigerating.

Notes

Store in the refrigerator for up to 4 days. If you prefer juicier meat, substitute chicken breast with boneless, skinless chicken thighs. Use coconut aminos instead of soy sauce to make this dish gluten-free.
