A creamy, tangy Greek yogurt-based sauce elevates the meal without the heaviness of traditional mayo, creating a balanced, high-protein bowl that is as healthy as it is delicious.
Ingredients
2 cups short-grain white rice
1 lb sashimi-grade tuna (or high-quality canned tuna in water)
1 English cucumber, thinly sliced
2 medium carrots, shredded
1/2 cup plain Greek yogurt
1 tablespoon lemon juice
1 teaspoon soy sauce
1/4 teaspoon garlic powder
Salt and black pepper to taste
Optional: Sesame seeds or chopped scallions for garnish
Instructions
Rinse the rice under cold water until the water runs clear and cook according to package instructions. Let cool slightly.
In a small bowl, whisk together the Greek yogurt, lemon juice, soy sauce, and garlic powder to create the creamy dressing. Season with salt and pepper to taste.
Prepare the vegetables by slicing the cucumber into thin rounds and shredding the carrots.
If using raw tuna, slice it into bite-sized cubes. If using canned tuna, drain thoroughly.
Divide the cooked rice into four bowls.
Top each bowl with a portion of tuna, cucumber, and carrots.
Drizzle the prepared yogurt sauce over each bowl and garnish with sesame seeds or scallions if desired.
Notes
Ensure the rice is slightly cooled before assembling to keep the vegetables crisp and the fish texture pleasant. Store leftover sauce in an airtight container for up to 3 days. Use full-fat Greek yogurt for the most luxurious mouthfeel.
