Description

A fresh and sophisticated lunch option that perfectly balances lean turkey breast with creamy Hass avocado and crisp baby spinach. This wrap is designed for optimal flavor and texture, utilizing a smart layering technique to ensure it stays fresh and firm. It is an excellent choice for a quick, nutritious, and satisfying meal that keeps you energized throughout the busy workday.

Ingredients

Scale

8 oz low-sodium oven-roasted deli turkey breast
1 large ripe Hass avocado
2 large flour tortillas
2 cups fresh baby spinach
1 vine-ripened tomato, seeded and diced
2 tablespoons stone-ground or Dijon mustard

Instructions

Lay the flour tortillas flat on a clean surface.
Spread one tablespoon of mustard evenly across the center of each tortilla.
Layer the turkey breast slices over the mustard base.
Place the sliced avocado on top of the turkey.
Add the baby spinach and diced tomatoes over the avocado.
Tuck in the sides of the tortilla and roll tightly into a cylinder.
Slice each wrap in half on a diagonal for serving.

Notes

Ensure the tomato is well-seeded to prevent the wrap from becoming soggy. If preparing ahead, keep the avocado in a larger piece or brush with a little lemon juice to prevent browning. You can substitute the turkey with grilled chicken breast if preferred.
