Description

Designed to be batch-cooked for busy weeknights, it develops deeper, more complex flavors as it melds in the refrigerator. The secret to its velvety, thick texture is the natural release of starches from the beans, creating a comforting, nutrient-dense main dish that stays fresh, lean, and delicious throughout the entire work week.

1.5 lbs ground turkey (93% lean)
1 large yellow onion, diced
3 cloves garlic, minced
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) red kidney beans, drained and rinsed
1 can (28 oz) fire-roasted diced tomatoes
1 tbsp chili powder
1 tsp ground cumin
1 tsp smoked paprika
1 tbsp olive oil
Salt and black pepper to taste


Instructions

Heat olive oil in a large pot over medium heat.
Add the yellow onion and sauté until soft and translucent, about 5 minutes.
Add the minced garlic and cook for another minute until fragrant.
Add the ground turkey to the pot and cook until browned, breaking it apart with a spoon.
Stir in the chili powder, cumin, and smoked paprika, ensuring the turkey is well coated.
Pour in the fire-roasted tomatoes and both types of beans.
Bring the mixture to a gentle simmer, then turn the heat to low.
Use a spoon to lightly mash a small portion of the beans against the side of the pot to naturally thicken the chili.
Simmer uncovered for 30-35 minutes, stirring occasionally.
Season with salt and pepper to taste before serving or portioning for meal prep.

Notes

Store in airtight containers in the refrigerator for up to 4 days. This chili also freezes exceptionally well for up to 3 months. For variation, top with fresh cilantro, avocado slices, or a dollop of Greek yogurt.
