Ingredients
2 cups cooked turkey, shredded or cubed
2 cups cooked quinoa, room temperature
2 cups fresh green beans, trimmed
1/2 cup leftover cranberry sauce
2 tablespoons olive oil
1 tablespoon fresh lemon or orange juice
Salt and black pepper to taste
Instructions
Bring a medium pot of water to a boil and blanch the green beans for 3 minutes, then immediately plunge into an ice bath and drain.
In a small bowl, whisk together the cranberry sauce, olive oil, and citrus juice until smooth to create the vinaigrette.
Divide the cooked quinoa into four serving bowls.
Top each bowl with a portion of the shredded turkey and the blanched green beans.
Drizzle the cranberry vinaigrette evenly over each bowl.
Season with salt and pepper to taste and serve immediately.
Notes
Ensure turkey is chilled before assembly to maintain food safety. You can substitute the turkey with rotisserie chicken, or use farro or brown rice instead of quinoa. Roasted Brussels sprouts make a great alternative to green beans.
