1.5 lbs Turkey breast fillets
1.5 cups Long-grain brown rice
2 cups Broccoli florets, chopped
2 large Carrots, sliced into thin coins
3 tbsp Extra-virgin olive oil
1 tsp Dried thyme
1/2 tsp Garlic powder
Salt and black pepper to taste


Instructions

Cook the brown rice according to package directions and set aside.
Preheat oven to 400°F and season turkey with olive oil, thyme, garlic powder, salt, and pepper.
Roast turkey for 20-25 minutes until internal temperature reaches 165°F, then let it rest before slicing.
While turkey roasts, heat a skillet over medium-high heat with a drizzle of olive oil.
Flash-sauté the carrots for 3 minutes, then add broccoli and cook for another 3-4 minutes until tender-crisp.
Divide the cooked rice, sliced turkey, and vegetable mixture into four airtight meal prep containers.
Allow to cool before sealing and refrigerating for up to 4 days.
