Ingredients

1 lb ground turkey (93/7 ratio)
1/2 cup breadcrumbs
1 large egg
1/4 cup fresh parsley, chopped
1 tsp garlic powder
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
2 medium zucchinis, sliced into rounds
2 tbsp olive oil
1 cup sugar-free marinara sauce


Instructions

Preheat your oven to 400°F (200°C).
In a large bowl, combine the ground turkey, breadcrumbs, egg, parsley, garlic powder, oregano, salt, and pepper until well incorporated.
Shape the mixture into roughly 1-inch meatballs.
Arrange the meatballs on one side of a large parchment-lined sheet pan.
Place the zucchini rounds on the other side of the pan and drizzle with olive oil, salt, and pepper.
Bake for 20-25 minutes until the internal temperature of the meatballs reaches 165°F.
Divide the meatballs and zucchini into four meal prep containers, adding a dollop of marinara sauce to each.

Notes

Store in airtight containers in the refrigerator for up to 4 days. Reheat in the microwave for 90 seconds. To keep the zucchini from getting too soft, roast slightly al dente.
