1.5 lbs 93% lean ground turkey
2 lbs Yukon Gold potatoes, peeled and cubed
2 large carrots, diced
1 cup frozen peas
1 medium onion, diced
3 cloves garlic, minced
2 tbsp all-purpose flour
1.5 cups low-sodium chicken bone broth
1 tbsp fresh thyme leaves
2 tbsp olive oil
1/4 cup Greek yogurt
Salt and black pepper to taste


Instructions

Preheat your oven to 400°F (200°C).
Boil the potatoes in salted water until tender, drain well, and mash with Greek yogurt and a drizzle of olive oil until smooth.
In a large skillet, heat olive oil over medium-high heat and sauté onions and carrots until softened.
Add the ground turkey, cooking until browned and breaking it into small crumbles.
Stir in the garlic and flour, cooking for 1 minute to remove the raw flour taste.
Pour in the chicken broth and add thyme, stirring until the sauce thickens and coats the turkey.
Fold in the peas, season with salt and pepper, then transfer to a baking dish.
Spread the mashed potatoes evenly over the turkey mixture and use a fork to create textured peaks on the surface.
Bake for 20 minutes or until the top is golden brown and the filling is bubbly.

Notes

Ensure vegetables are diced to uniform half-inch cubes for even cooking. The craggy peaks created with a fork are key for getting that extra crispy texture. Leftovers can be stored in an airtight container for up to 3 days in the refrigerator.
